To make pap (ogi), follow these steps:

Ingredients

  • Wet Corn Starch (Akamu, Ogi or Pap)
  • Water (Hot and Cold)
  • Evaporated Milk (Peak Milk)
  • Sugar (to taste)

Preparation

  1. Crush the Lumps:
    • Crush the lumps of akamu with a tablespoon until they are very small.
    • Add cold water in small quantities and mix until the mixture has a medium consistency with no lumps. The goal is to mix the akamu as thick as possible.
  2. Boil Water:
    • Boil 3 cups of water in a kettle.
    • Stir the mixture well before pouring the hot water to prevent lumps from forming.
  3. Pour Hot Water:
    • Pour the boiling water slowly and steadily into the bowl of akamu in a circular motion while stirring. This prevents lumps from forming3.
  4. Thicken and Set:
    • Continue stirring until the mixture starts to thicken. Stop stirring once it sets completely.
  5. Add Milk and Sugar:
    • Add evaporated milk and sugar to taste. For babies, use baby milk and no sugar.

Tips

  • If using corn flour, ensure it is very fine with no chaff, similar to custard powder3.
