KUNNUAYA RECIPE WITH BANANA TWIST

Here is a recipe for Nigerian Kunu Aya (Tiger Nut Drink) with a banana twist:

Ingredients

  • 2 cups tiger nuts, washed and soaked overnight
  • 1 cup coconut meat, chopped
  • 8 medjool dates, pitted and chopped
  • 2 ripe bananas
  • 1 tsp vanilla extract
  • 1/2 tsp ground ginger
  • 4 cups water
  • Pinch of salt

Instructions

  1. Drain and rinse the soaked tiger nuts. Add half to a blender along with the coconut meat, dates, bananas, vanilla, ginger and a pinch of salt. Blend until smooth.
  2. Line a fine mesh strainer with cheesecloth and place over a bowl. Pour the blended mixture through the strainer, pressing on the solids to extract as much liquid as possible. Discard the solids.
  3. Repeat step 1 and 2 with the remaining tiger nuts and 2 cups of the water.
  4. In a pitcher, combine the two batches of strained kunu aya. Stir in the remaining 2 cups water. Taste and adjust sweetness if desired.
  5. Refrigerate for at least 1 hour before serving chilled over ice.
