Savory Plantain Frittata: A One-Pan Wonder
Here are three different recipes for plantain frittata:
Recipe 1: Baked Plantain and Egg Frittata
- Ingredients:
- For the Eggs: 6 eggs, salt to taste, 1/4 tsp paprika, 1/4 tsp black pepper
- For the Plantains: 2 ripe plantains, salt to taste, 1/4 cup olive oil
- For the Vegetables: 2 Tbsp cooking oil, 1/4 cup green bell peppers diced, 1/4 cup red bell peppers diced, 1/2 cup red onion, 2 fresh tomatoes chopped, 1/2 tsp paprika, 1/2 tsp cayenne pepper, 1 tsp seasoning powder, salt to taste
- Instructions:
- Cut plantains into cubes and season with salt.
- Fry plantains in oil until golden brown.
- Sauté onions, bell peppers, and tomatoes in oil.
- Whisk eggs with salt and paprika.
- Mix sautéed vegetables into the eggs.
- Pour egg mixture into a greased baking pan.
- Place plantains over the mixture.
- Bake at 350°F for 30 minutes.

Recipe 2: Plantain Frittata
- Ingredients:
- 2-3 very ripe plantains
- 7 eggs
- 1/2 cup chopped onion
- 3 cloves garlic – minced
- 1 large roma tomato – chopped
- 1 cup chopped bell pepper
- 2 tablespoons oil
- 1 1/2 cup chopped sausage
- 1/2 teaspoon salt
- 1 teaspoon bouillon powder
- 1/4 teaspoon ground white or black pepper
- Oil for deep frying plantains
- 1/2 teaspoon oil (for greasing pie plate)
- Parsley for garnishing (optional)
- Instructions:
- Cut plantains into cubes and fry until golden brown.
- Sauté onions, garlic, and bell peppers in oil.
- Add sausage and cook until browned.
- Whisk eggs with salt, bouillon powder, and pepper.
- Mix cooked vegetables and sausage into the eggs.
- Pour egg mixture into a greased pie plate.
- Top with fried plantains.
- Bake at 350°F for 30 minutes.
Recipe 3: Plantain Frittata (Baked plantain and egg recipe)
- Ingredients:
- 3 ripe plantains
- 1 small tomato (chopped)
- ½ red bell pepper (chopped)
- ½ green bell pepper (chopped)
- 1 tablespoon of cooking oil
- 1 medium onion (chopped)
- ½ teaspoon garlic powder
- 8 Large eggs beaten
- 3 hotdog franks (chopped)
- 1 teaspoon crushed peppers flakes
- ½ teaspoon Salt/bouillon powder (add more to taste)
- ½ teaspoon Italian seasoning
- Instructions:
- Peel plantains and cut into ¼ inch thick rounds.
- Fry plantains until lightly golden brown.
- Sauté onions, garlic, and bell peppers in oil.
- Add sausage and cook until browned.
- Whisk eggs with salt, bouillon powder, and Italian seasoning.
- Mix cooked vegetables and sausage into the eggs.
- Pour egg mixture into a greased cast iron skillet.
- Top with fried plantains.
- Bake at 350°F for 25-30 minutes or until center firms up.
These recipes offer different variations of plantain frittata, including different vegetables and proteins.
