Simple Recipe Guide for Nigerian Okra Soup with Oatmeal Swallow

Here’s an easy way to make a tasty okra soup with oatmeal swallow, perfect for Nigerians and good for managing PCOS. It’s full of fiber, protein, and healthy ingredients to keep you full and your blood sugar steady.

What You Need (Serves 2-3)

For the Okra Soup:

  • 2 cups fresh okra (chopped fine or blended)
  • 200g smoked fish (or cooked turkey, shredded)
  • 1 cup chopped spinach (or ugu leaves)
  • 1 medium onion (chopped)
  • 1 tablespoon palm oil (or olive oil)
  • 1 tablespoon ground crayfish
  • 1-2 scotch bonnet peppers (blended)
  • Salt and seasoning (like Maggi or Knorr) to taste
  • 2 cups water (or low-sodium stock)

For the Oatmeal Swallow:

  • 1 cup rolled oats
  • 2 cups water

How to Cook It

Okra Soup:

  1. Put a pot on fire, add the palm oil or olive oil, and heat it up.
  2. Throw in the chopped onion and blended pepper. Fry for 2-3 minutes until it smells nice.
  3. Pour in the water or stock, then add the smoked fish (or turkey), crayfish, and seasoning. Let it boil, then lower the heat and cook for 5 minutes.
  4. Add the chopped okra and stir well. Cook for 5-7 minutes until the soup gets a bit thick.
  5. Toss in the spinach or ugu and let it simmer for 3 more minutes. Done!

Oatmeal Swallow:

  1. If you want it smooth, blend the oats into a fine powder first (optional).
  2. Boil 2 cups of water in a pot, then lower the heat.
  3. Slowly pour in the oat powder (or whole oats), stirring all the time so it doesn’t form lumps.
  4. Keep stirring for 5-7 minutes until it’s thick and smooth like regular swallow.

How to Serve

Scoop a small ball of the oatmeal swallow onto your plate and serve with the hot okra soup. Add a side of sliced cucumber or tomatoes for extra freshness.

Extra Tips

  • Don’t overdo the swallow—keep it small (about 1/4 of your plate), then load up on soup with fish and veggies.
  • Use just a little oil to keep it light.
  • Add spices like ginger or garlic if you like—they’re good for your body too!

This meal mixes Nigerian flavors with healthy twists. Enjoy your okra soup and oatmeal swallow!
