How to make Pap
To make pap (ogi), follow these steps:
Ingredients
- Wet Corn Starch (Akamu, Ogi or Pap)
- Water (Hot and Cold)
- Evaporated Milk (Peak Milk)
- Sugar (to taste)
Preparation
- Crush the Lumps:
- Crush the lumps of akamu with a tablespoon until they are very small.
- Add cold water in small quantities and mix until the mixture has a medium consistency with no lumps. The goal is to mix the akamu as thick as possible.
- Boil Water:
- Boil 3 cups of water in a kettle.
- Stir the mixture well before pouring the hot water to prevent lumps from forming.
- Pour Hot Water:
- Thicken and Set:
- Continue stirring until the mixture starts to thicken. Stop stirring once it sets completely.
- Add Milk and Sugar:
- Add evaporated milk and sugar to taste. For babies, use baby milk and no sugar.
Tips
- Use a sizeable bowl to contain the meal as it rises during preparation.
- If using corn flour, ensure it is very fine with no chaff, similar to custard powder3.
- For a different flavor, add vanilla extract for vanilla, chocolate powder for chocolate, or strawberry powder for strawberry.
Serving Suggestions
- Serve with Akara (bean balls), moi moi, or other Nigerian foods like Fried Plantain.
