Ingredients
- 3 cups cooked short grain rice, cooled

- 1 tbsp vegetable oil
- 1 tsp minced garlic
- 1/2 onion, diced
- 1 cup frozen mixed vegetables (optional)
- 2 eggs, scrambled
- 2 tbsp sesame seeds
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the garlic and stir for 10 seconds.
- Add the chopped kimchi and stir fry for 1-2 minutes until fragrant.
- Add the onions and frozen vegetables (if using) and cook for 2-3 minutes until softened.
- Add the cooked rice and kimchi juice. Stir to combine, breaking up any clumps of rice.
- Drizzle with sesame oil and season with salt and pepper to taste. Stir to coat the rice evenly.
- Push the rice to the sides of the pan to create a well in the center. Pour the beaten eggs into the well and let cook for 30 seconds, then stir to scramble.
- Once the eggs are cooked, mix everything together.
- Remove from heat and stir in the sesame seeds.
- Serve hot, garnished with extra kimchi, green onions, or a fried egg if desired.
