  • Pinch of sugar
  • Fish sauce (to taste)
  • Handful of bean sprouts
  • 300g pack of rice noodles
  • Handful of fresh herbs (coriander, mint, basil)
  • 1 red or green chili, sliced
  • 2 spring onions, thinly sliced
  • Crispy fried onions (optional)
  • Lime wedges

Instructions:

  1. Marinate the steak: Rub the steak with sesame oil.
  2. Cook the steak: Heat a pan or griddle until hot. Sear the steak for 2-3 minutes per side, depending on your preference. Set aside to rest.
  3. Make the broth: In a saucepan, heat the beef stock with star anise and ginger. Season with sugar and fish sauce. Add bean sprouts and cook for a few minutes.
  4. Assemble the pho: Divide noodles between two bowls. Pour hot broth over the noodles. Top with sliced steak, herbs, chili, spring onions, crispy fried onions (if using), and lime wedges.
