Quick Steak Pho: A Delicious Summer Meal in Minutes
This recipe is perfect for a light and flavorful summer dinner. It’s quick and easy to make, ready in under 20 minutes!
Ingredients (serves 2):
- 1 Tesco Finest 35 Day Salt Dry Aged Aberdeen Angus Ribeye Steak
- Sesame oil
- 2 packs Tesco Finest Beef Stock (450ml each)
- 2 star anise
- 3cm piece ginger, sliced
- Pinch of sugar
- Fish sauce (to taste)
- Handful of bean sprouts
- 300g pack of rice noodles
- Handful of fresh herbs (coriander, mint, basil)
- 1 red or green chili, sliced
- 2 spring onions, thinly sliced
- Crispy fried onions (optional)
- Lime wedges
Instructions:
- Marinate the steak: Rub the steak with sesame oil.
- Cook the steak: Heat a pan or griddle until hot. Sear the steak for 2-3 minutes per side, depending on your preference. Set aside to rest.
- Make the broth: In a saucepan, heat the beef stock with star anise and ginger. Season with sugar and fish sauce. Add bean sprouts and cook for a few minutes.
- Assemble the pho: Divide noodles between two bowls. Pour hot broth over the noodles. Top with sliced steak, herbs, chili, spring onions, crispy fried onions (if using), and lime wedges.
Tips:
- You can substitute the ribeye steak with another cut of beef, such as flank steak or sirloin. Just be sure to slice it thinly against the grain for tenderness.
- No Tesco Finest ingredients nearby? Use your favorite beef broth, another type of steak, and adjust the seasonings to your taste.
- For a vegetarian option, replace the steak with tofu or tempeh. Marinate and cook them similarly to the steak.
