This recipe captures the delightful taste of Moi Moi steamed in fragrant banana leaves. The leaves infuse the bean batter with a subtle sweetness as it cooks, creating a truly divine dish!

Ingredients:

  • Beans (peeled and washed)
  • Red bell pepper
  • Scotch bonnet pepper
  • Onion
  • Crayfish
  • Ginger
  • Seasoning (Maggi cubes, Onga, and salt)
  • Vegetable oil
  • Water
  • Boiled eggs
  • Fresh banana leaves

Instructions:

  1. Blend the base: Combine the beans, red bell pepper, scotch bonnet pepper, onion, and crayfish in a blender. Blend until smooth.
  2. Season and adjust: Pour the blended mixture into a bowl. Add vegetable oil, seasoning cubes, and salt to taste. Stir well.
  3. Thin the batter: Gradually add water to the mixture, stirring constantly, until you reach a desired consistency. The batter should be thick but pourable.
  4. Prepare the banana leaves: Wash the banana leaves thoroughly and pat them dry. If the leaves are too stiff, blanch them in hot water for a few seconds to make them more pliable.
  5. Fold the packets: Take a banana leaf and fold it into a cone shape. Pinch the bottom of the cone to create a seal.
  6. Fill and fold: Pour about ½ cup of bean batter into the cone. Add a slice or two of boiled egg (optional). Fold the top of the leaf inwards to close the packet, ensuring there are no openings.
  7. Steam the Moi Moi: There are two methods for steaming:
    • In a pot: Place the filled banana leaf packets in a pot with enough water to reach halfway up the packets. Bring the water to a boil, then reduce heat to low and simmer for 30 minutes.
    • Steaming basket: Alternatively, you can use a steaming basket placed over a pot of boiling water. Arrange the packets in the basket, cover, and steam for 30-40 minutes. This method helps prevent water from entering the packets.
  8. Check for doneness: Carefully open one packet and check if the Moi Moi is cooked through. It should be firm and not runny.

Tips:

  • You can adjust the amount of scotch bonnet pepper to your desired spice level.
  • For added protein, consider incorporating chopped shrimp or shredded chicken into the batter.
  • Serve your Moi Moi hot with a side of your choice, such as rice, jollof rice, or plantain.
