Truffle Brie Croque Madame Recipe for a Luxurious Brunch
This recipe elevates your classic brunch toastie with decadent flavors and textures.
Ingredients (serves 2-4):
- For the Béchamel Sauce:
- 20g unsalted butter
- 1 heaped tbsp plain flour
- 150ml whole milk, warmed
- Salt and pepper to taste
- For the Croque Madame:
- Olive oil for frying
- 4 slices Tesco Finest White Sourdough Bread
- 135g pack Tesco Finest French Brie with Truffle, sliced
- 6 slices from 120g pack Tesco Finest Finely Sliced Honey Roast Ham
- 25g Tesco Finest Reserve Swiss Gruyère Cheese, grated
- 2-4 Tesco Finest Free Range Bluebell Araucana Eggs
- Knob of unsalted butter
Instructions:
- Make the Béchamel Sauce: Melt 20g butter in a saucepan over low heat. Whisk in flour to form a paste, cook for 3-4 minutes. Slowly whisk in warm milk until smooth. Cook for 5-6 minutes, stirring constantly, until thick and glossy. Season with salt and pepper. Set aside.
- Toast the Bread: Heat your grill to high. In a frying pan, heat olive oil with a knob of butter. Fry the sourdough slices in batches for 2-3 minutes per side until golden brown.
- Assemble the Croque Madame: Divide brie slices between 2 toasted bread slices. Top with 3 ham slices each. Add another slice of toast, spread béchamel sauce generously, and sprinkle with grated cheese.
- Grill and Fry: Place the sandwiches on a baking tray or grill pan. Grill for 5 minutes until melted and golden brown.
- Fry the Eggs: Heat a splash of oil in the frying pan used for toasting. Crack in 2 eggs per serving and fry for 2-3 minutes. The whites should be set, the yolks runny (adjust cooking time for desired doneness).
- Serve: Place the fried eggs on top of or beside the sandwiches. Enjoy immediately!
